Go slowly and don't rush through the story, it's not going anywhere. Do side quests and explore the world. Try to stay a level or two above the main quests - but don't go too far ahead or they'll be too easy. Don't engage any enemies with a red skull above their heads because they will fuck you up.

Btw, as you probably know, you have to unlock the parry skill first and there are some hits/enemies that can't be blocked/parried at all. And you need to be in shield-mode to be able to parry, obviously. You can enable "toggle shield mode" in gameplay preferences, I find that helps.
